umami is a counter format with no dine-in, so there are no reservations. You order at the counter, from your car, or for delivery.

At launch: five fire-grilled burgers, savoury Les Bonbons, lacquered wings, house fries, a seven-sauce Dip Wall, kitchen-bottled drinks, combos and a torched dessert. The bread is baked in-house and everything is finished over open flame. Tacos arrive about four months in, bánh mì about six.
